Sweet Potato & Brussels Sprout Breakfast Hash
First of all - really underrated how much of a tongue twister it is to say “Brussels Sprouts” properly. Huh.
This yummy breakfast is the perfect combination of healthy and savory! We got mini sweet potatoes at Trader Joes last week and tbh I’ve been debating what I would be able to use them for. Whatever size sweet potatoes you have, look no further fam. This breakfast was bomb dot com. The key here is to cook the bacon first, and then sauté the rest of the ingredients IN the bacon grease to reaalllly soak up all that flavor. Disclaimer - I wouldn’t recommend making this while wearing a sports bra. Take it from me and the lil grease splatter burn on my belly…
Make sure you read carefully to get to the secret ingredient that’s literally not a secret at all because it’s right here in writing. As always, I’m not going to tell you exactly how much seasoning I used because this should be cooked to YOUR taste, not mine. Do it how you feel it.
Ingredients:
Sweet potatoes - I used 3 minis. If using regular sized potatoes, 2 is probably plenty.
Bacon
Shaved Brussels sprouts
Eggs
Garlic Powder
Onion Powder
Paprika
Salt
Pepper
Maple syrup (whaaat! this was a cross-your-fingers random decision but I really feel it took this to the next level)
Directions:
Chop bacon into small pieces and cook stovetop until golden brown and crispy
Remove bacon from pan using a slotted spoon
Add Brussels sprouts and seasoning to the pan - be careful of grease splatter! Cook until wilted or slightly crispy depending on your preference, remove from pan using a slotted spoon
Add sweet potatoes to the pan and cook on medium heat for about 8 minutes. Toss some more seasoning on there if you’re feelin it.
After 8 minutes, drizzle maple syrup on top and cover. Let those bad boys soften and sweeten for about 5 more minutes.
Add Brussels and bacon back into the pan with the potatoes and stir
Use your spoon to create lil holes in the mixture and crack eggs directly into the holes. Cook for 2-3 minutes or until egg is cooked to your liking
Drizzle one more layer of maple syrup and some salt and pepper and serve
Don’t even try to gracefully scoop this onto your plate - it’s impossible. Take in all the beauty before you scoop it and then dig right in!
