My Super Bowl Menu
If you’re anything like me, trying to choose a menu for a day that allows for endless snacks can feel like a deep, dark, Googling hole. Well, look no further. I’ve done all the searching for you and have compiled my finalized choices here in one place for you. I REALLY struggle with following recipes, but I’m attaching the ones that I’ll be loosely referencing! Also, can we talk about how far you have to scroll down on recipe pages to get to the actual recipe? I hereby promise to never do that to you.
I’m going for a mix of healthy and indulgent which is basically my whole lifestyle in a nutshell. Appetizers are my favorite meal. This is my Christmas. LFG.
Buffalo Chicken Dip
Come on, you can’t NOT have buffalo chicken dip. I usually don’t use a recipe for this one, I just legitimately do it how I feel it and add a boat load of cheese. But this time I’m going to try to switch it up and make one in the Instant Pot! I’m going with this recipe. Making things in the Instant Pot creates less dishes and requires less attention, both of which are music to my ears. I’ll serve this with tortilla chips as well as veggies! Don’t sleep on celery, y’all.
Air Fryer Kale Chips
This one will be a first for me! To be honest, I’m not a huge kale fan. I am, however, a big believer that the air fryer can make anything better. I’m going to give it a shot using this recipe.
Baked Chicken Wings
I have made wings every way imaginable, but I really love baking them the best! I like how it retains the juices but gives you crispy exterior, too. Get you some wings that can do both! I’m linking this recipe because I used her photo and #womensupportingwomen but all I’ll really follow here is the cook time & temperature. Here’s how I do mine:
Start by melting 1 stick of butter in the microwave
Dip your wings in flour of your choice (I’ll use gluten free), and then the butter
Mix the following in a bowl and dip the wings until coated:
Garlic powder
Onion powder
Trader Joes Citrusy Garlic Seasoning (this is new and SO good)
Salt
Pepper
Melt another stick of butter (just trust me) - pour half of it in the bottom of your baking dish, place the wings in, and pour the remaining butter on top of the wings. YUM.
Homemade Guacamole
It’s a staple! This one is pretty difficult to mess up, just make sure you get some nice ripe avocados! For reference, when you pick one up check to see if the little stem is still attached. This helps ensure freshness Next, give it a little squeeze. It should have a little give to it, but should not be squishy! I’ll use this recipe for the rest. Serve with corn chips!
Air Fryer Jalapeño Poppers
My faaaavorite! This recipe calls for reduced fat cheese, I’m not about that life. I also cook mine at 400 degrees for crispier bacon, but do it how you feel it! Don’t forget the toothpicks!
Hawaiian Ham & Swiss Sliders
This one will be a first for me and I am SO excited. I despise mustard though, so I’m gunna leave that out. Here’s the recipe!
There you have it, folks. Your mostly-indulgent-with-a-couple-healthyish-options Super Bowl menu! Enjoy, and may the best man (Tom Brady) win! Share your photos on the gram and tag me @emilycollins!
