Zucchini Chicken Parm Boats
Easy dinner that is healthy and inexpensive? Whaaaat?! Look no further, fam. I sorta winged it on this one per usual, but I have to share because it is delicious and nutritious. Zucchini is great for a lot of things, but one of my favorites is that it’s super high in antioxidants which are great for your skin and your precious little heart.
Ingredients:
Zucchini (I used 3 full ones which makes for 6 boats, my husband eats a lot.)
Ground chicken
Your favorite red sauce
Shredded parmesan cheese
Garlic powder
Italian seasoning
Salt
Pepper
Directions:
Preheat oven to 400 degrees
Cut each zucchini in half and carve out the inside - this was the hardest part for me because naturally I don’t have a great tool for it. I used a scalloped spoon and just literally carrrrrved it out. You could save the insides and toss them in the air fryer…recipe for that coming soon.
Cook the ground chicken in a pan on medium heat. Season with salt and pepper while cooking. Be careful not to overcook it as it will still be spending some time in the oven!
Lower the heat and add the red sauce, parmesan cheese, Italian seasoning, and garlic powder into the pan. You don’t need me to tell you how much. Do it how you feel it, you got this.
Scoop your saucy cheesy chicken mixture into the zucchini boats
Top with more cheese because why not
Place zucchini boats in a glass baking dish and toss those bad boys in the oven for 15 minutes
